Sweet Potato Protein Short Stack
What you’ll need…
☆ 3 oz sweet potato mashed (no skin)
☆ 15 g chia seeds
☆ 1 tbsp Walden Farms Pancake syrup (or sugar free maple)
☆ 2 oz egg whites
☆ 30-40g vanilla protein (see favorites page)
☆ 1 tsp baking powder
☆ cinnamon
☆ greek yogurt (Oikos triple zero vanilla)+ (optional)
☆ fresh or frozen berries (optional)
What to do:
// Place sweet potato in a bowl and mash with a fork until creamy.
// Add chia seeds, protein powder, baking powder, syrup, and cinnamon to the bowl.
// Mix together and add water to adjust consistency until it forms into a batter.
// Place onto medium heat pan and cook on both sides to your preference.
// Add fruit, yogurt, or any other toppings of choice!
