Pesto Shrimp Pasta

What you need
☆ 5 oz shrimp
☆ Pasta of choice- I used Barilla Protein Penne
☆ Pesto (I prefer Trader Joe’s brand, although you can use any homemade recipe as well)
☆ Spinach
☆ Grated Parmesan or nutritional yeast (optional)

☆ Salt & pepper to taste


What to do
☆ Season both sides of raw shrimp with nutritional yeast (for flavor and texture without using more cheese), again, optional**

☆ Pan fry shrimps on both sides until pink
☆ Boil pasta of choice
☆ Toss in pasta with the shrimp
☆ Add in pesto and veggies
☆ Mix together on low heat
☆ Top with pesto & grated parmesan!

I used Trader Joe's vegan pesto, a small amount of feta and sprinkled parmesan ontop! Enjoy!! 🌿
