Cinnamon Vanilla Loaf Cake
What You’ll Need
☆ 2 eggs
☆ 3 tbsp maple syrup (I used sugar free)
☆ 2 tbsp coconut oil (melted)
☆ 1 tsp vanilla extract
☆ ¼ cup almond milk
☆ ⅓ cup coconut sugar
☆ 2 cups almond flour
☆ 1 scoop vanilla protein powder
☆ ½ cup oat flour
☆ 1 tsp cinnamon
☆ 1 tsp baking soda
☆ 1 tsp baking powder
☆ pinch of salt
Instructions:
☆ Preheat the oven to 350 degrees. In a large bowl, whisk together eggs, maple syrup, coconut oil, vanilla, milk and coconut sugar.
☆ Once combined, add almond flour, vanilla protein, oat flour, cinnamon, baking soda, baking powder and salt.
☆ Add batter to a greased loaf pan and bake in the oven for 25 minutes. Once cooked, remove from oven, let cool and cut into 8 slices.
**Not included in the video (Optional: After cooled, mix together ½ tsp cinnamon, 1 tsp coconut sugar and 2 tbsp maple syrup. Once mixture is combined, spread glaze over the top of the loaf)
