Banana Zucchini Muffins

What You’ll Need

☆ Dry ingredients:

1 and 1/2 cups of flour (I used combo of wheat and oat) 

1/2 tablespoon of salt

1 teaspoon baking soda

1/2 teaspoon cinnamon

☆ Wet ingredients: 

1 ripe mashed banana

1 medium zucchini shredded

1 egg

1/3 cup of milk of choice

1/4 cup of honey

2 tablespoons olive oil

1 teaspoon vanilla


☆ Mix-ins: 

1/2 cup lily's dark chocolate chips

1/4 cup chopped walnuts

☆ Instructions:

1. Shred zucchini.

2. Place in the center of our paper towel and squeeze out the excess water.

3. Blend banana and zucchini in a blender. 

4. In a bowl, combine all wet ingredients and stirring the zucchini/banana. 

5. Combine dry ingredients separately

6. Slowly add dry to wet and stir with a spoon. 

7. Add mix ins and pour into a prepared muffin pan. 

8. Bake at 350 degrees for 26 to 28 minutes
